Easter Bunny Salad and Fruit Cup

Easter Bunny Salad

 

4 plates

1 bag of shredded lettuce

8 almonds, either whole or sliced

Maraschino Cherries

1 can pear halves

Vanilla or flavored yogurt

 

Place hand full of lettuce on plates and put a small scoop of yogurt on the plate.  Place  one pear half, round side up, over the yogurt.  Insert 2 almonds in the narrow end of the pear for the ears.  Slice a cherry in half and cut each half into 3 parts.  Insert the cherries to look like the eyes and nose of the bunny.  Cut marshmallows to look like the tail.   

 

Frozen Fruit Cup

1 Cup applesauce

1-10 oz package frozen strawberries, thawed

1-11 oz can mandarin oranges, drained

2 tablespoons orange juice concentrate

Other fresh berries can be added if desired

 

Combine all ingredients together in a bowl and spoon in to small containers for the freezer.  Freeze until firm, about four hours. Let sit at room temperature for 20 minutes before serving.
