Green Chile Squash
2 lbs. yellow squash
1/2 yellow onion, chopped
1/2 stick of butter, melted
2 eggs, beaten
1 4oz. can chopped green chiles
2 tsp. sugar
1 sleeve Ritz crackers, crushed (reserve 1/4 cup)
1 tsp. salt
1/2 tsp pepper
Wash squash, trim ends and slice in 1/4 inch rounds
Combine squash and onion in steamer basket over 1 inch of water; steam until tender.
Place squash and onion in large bowl; add butter, green chiles, crackers, eggs, sugar, salt and pepper...mix together.
Pour mixture into 8x8 baking dish coated with cooking spray.
Sprinkle 1/4 cup crackers on top.
Bake at 375 degrees for 45 minutes.
