No Bake Granola Bites

Yield: 30 balls

•¾ cup creamy peanut butter
•¼ cup karo lite syrup
•½ teaspoon vanilla
•2 cups granola (Meagan uses dark chocolate almond granola)
•½ cup oats
•½ cup rice krispies
•½ cup chocolate chip morsels

--In a microwaveable bowl add the peanut butter.  Place in the microwave and heat for 30 seconds or until melted.  Stir in the syrup and vanilla and set aside.

--In a large bowl add the granola, oats, rice krispies and chocolate chip morsels.  Mix everything up with your hands and then slowly stir in the peanut butter mixture.  Using your hands mix everything up so that it is well coated with the peanut butter.
--Refrigerate the mixture for at least 20 minutes and then using a spoon or cookie scoop start to make little balls of the mixture.  You will need to use your hands to ensure that the ball is well compacted so that it does not fall apart.  Lay the balls onto the parchment paper.
--Store in an airtight container in the refrigerator.
