Autumn is Cooking Healthy Jalapeno Poppers

Reduced Fat Jalapeno Poppers


·         12 Jalapenos

·         4 oz Reduced Fat Cream Cheese

·         2 oz Reduced Fat Cheddar Cheese

·         ½ cup beaten or liquid egg whites

·         1 cup crushed Corn Flakes

·         ¼ cup Ground Flax seed

·         1/8 tsp paprika

·         1/8 tsp garlic powder

·         1/8 tsp chili powder

·         Olive or Canola Spray Oil


Note: If bacon is a must, add 2-3 tbs Turkey Bacon Bits to cheese mixture



·         Preheat oven to 350°

·         Spray cooking sheet with oil

·         WEARING GLOVES, cut stem off peppers and then cup in half lengthwise; scoop out seeds and veins

·         In a small mixing bowl, combine cream cheese and cheddar cheese (& Turkey Bacon Bits)

·         In a separate bowl, combine corn flakes, flax seed, paprika, garlic, and chili powder (dry mixture)

·         Fill peppers with cheese filling

·         Dip peppers in egg whites

·         Roll peppers in dry mixture

·         Bake on cooking sheet for ~25-30 minutes or until golden brown
