Baked Shrimp Scampi and Balsamic Bruschetta

A great summer dish that's quick, easy and delicious.<br>

Baked Shrimp Scampi

 

� cup butter

 

1 tbsp dijon mustard

 

� tbsp fresh lemon juice

 

� tbsp chopped garlic

 

� tbsp chopped fresh parsley

 

1 pound medium raw shrimp, shelled

 

and deveined

 

1.       Preheat oven to 450 degrees

 

2.       In small saucepan over medium

 

heat, combine butter, mustard, lemon

 

juice, garlic and parsley.  When

 

butter melts completely remove from

 

heat.

 

3.       Put shrimp in shallow baking

 

dish.  Pour butter mixture over

 

shrimp.

 

4.       Bake 12 to 15 minutes�or until

 

shrimp are pink and opaque.  Toss

 

with pasta.

 

 

 

Balsamic Bruschetta

 

4 Roma Tomatoes

 

� cup chopped fresh basil

 

2 tbsp shredded parmesan cheese

 

1 clove minced garlic

 

� tbsp balsamic vinegar

 

� tbsp olive oil

 

Salt and pepper

 

Loaf of bread, sliced and toasted�

 

In a bowl, toss together tomatoes,

 

basil, parmesan cheese and garlic.

 

  Mix in the balsamic vinegar, olive

 

oil, salt and pepper.  Serve on bread

 

slices.
