Turkey and Hummus Pinwheel

Ingredients:

·         4 large Whole Wheat Tortillas or 2 Flatbreads

·         1 cup Hummus

·         8 oz sliced Deli Turkey

·         1 (7oz) jar Roasted Red Peppers, drained and thinly sliced

Directions:

1.       Place tortilla flat and spread with ¼ cup hummus followed by ¼ of the turkey. Place red peppers even throughout.

2.       Starting from one end, begin to roll tightly. Wrap securely in plastic wrap and place in refrigerator for ~30 minutes before cutting.

3.       Unwrap and slice into 1-inch pinwheels. Place toothpick through each pinwheel to secure.

4.       Enjoy!

 

 

Fiesta Pinwheel

Ingredients:

·         4 large Whole Wheat Tortillas or 2 Flatbreads

·         2 (4.5 oz) Canned Chicken – packed in water

·         1 (8oz) package of Reduced-fat Cream Cheese – softened

·         ¼ cup Picante Sauce

·         1 tbsp Taco Seasoning (low sodium)

·         Dash of Garlic Powder

·         1 (4oz) can chopped green chilies

Directions:

1.       In a medium mixing bowl, mix together chicken, cream cheese, cheddar cheese, picante sauce, taco seasoning, garlic, and green chilies

2.       Place tortillas flat and spread evenly with mixture

3.       Starting from one end, begin to roll tightly. Wrap securely in plastic wrap and place in refrigerator for ~30 minutes before cutting.

4.       Unwrap and slice into 1-inch pinwheels. Place toothpick through each pinwheel to secure.

5.       Enjoy!
