Homemade Ketchup and Relish

Home Cafe's Jason Diehl stopped by the KLBK Cafe to show us how to make homemade ketchup and dill pickle relish-- just in time for your summer cookouts!
Homemade ketchup

1/2 c red onion, chopped
1 stick celery, chopped
1 garlic clove, minced
1 t ground coriander
1/4 t ground ginger
1 lb cherry or grape tomatoes(halved)
1/2 c red wine vinegar
1/4 c brown sugar
2 T corn syrup

In a medium sauce pan, on medium low heat, cook the onion, celery, garlic, coriander, ginger, and tomatoes until onions are translucent. Remove from heat and puree in blender until smooth. Put puree back into pan and add remaining ingredients and simmer on low until mixture is thickened to desired consistency. Chill and serve.

Homemade Dill Pickle Relish

2 c dill pickles, finely diced
2 t sugar
1/4 c apple cider vinegar
1 red bell pepper, deseeded and finely diced
1/2 c yellow onion, finely diced
1 pinch ground coriander
1 t chopped dill, fresh

salt and pepper, to taste

Heat vinegar and dissolve sugar in it. Add the rest of the ingredients except dill and stir on medium heat for 2 minutes. Remove from heat and stir in dill and salt and pepper. Chill and serve.
