Registered Dietician Autumn Bollinger cooks up a delicious holiday dish for us today.

Sweet Potato Casserole with a Healthy Twist


·        2 lbs sweet potatoes (about 4-5 medium), peeled

·        1/2 cup golden raisins

·        1 tbsp honey

·        1/2 tbsp ground cinnamon

·        1 tsp nutmeg

·        1 tsp allspice

·        1/2 tsp Vanilla Extract

·        8 oz can unsweetened crushed pineapple, drained

·        2 tbsp chopped pecans

·        1 cup mini marshmallows



1.      Preheat oven to 400°

2.      Cut sweet potatoes into large chunks and boil in water until soft. Drain and return to pot.

3.      Mash sweet potatoes and add in raisins, honey, spices, vanilla, and pineapple

4.      Lightly spray casserole dish with oil and spoon in sweet potato mixture.

5.      Top with pecans and marshmallows and bake for 15 minutes.
