Autumn Bollinger, Registered Dietitian from UMC, makes some Fresh Fruit Granola Bars.

Fresh Fruit Granola Bars

 

Ingredients:

 

·        1 ½ cup quick oats

·        1 tbsp whole wheat flour

·        ¼ cup chopped almonds

·        ¼ cup dark chocolate chips

·        ¼ cup ground flax

·        1 tsp cinnamon

·        ¼ tsp salt

·        1 egg

·        1 tsp vanilla extract

·        ½ cup honey

·        1 cup chopped fresh fruit of choice

·        1 tbsp canola oil

 

 

Directions:

 

1.     Preheat oven to 350º

2.     Mix all dry ingredients together

3.     Mix all wet ingredients together

4.     Combine wet and dry mixtures

5.     Spread mixture evenly into a 9x9 baking dish that has been lightly sprayed with canola/olive oil

6.     Bake for 20-25 minutes

7.     Remove from oven and let cool for ~15 minutes and enjoy!
