Kiss The Cook: Pumpkin Pasta with Sauteed Peppers & Onions
1 box pumpkin pasta
1 bell pepper, sliced
1 onion, sliced
1/2 tablespoon olive oil
1 jar pumpkin pasta sauce
1/4 cup toasted pumpkin seeds or pine nuts
1/3 cup grated mizithra or parmesan cheese
2-3 tablespoons chopped fresh parsley
- Cook pasta according to package directions.
- While pasta is cooking, heat oil in a large skillet over medium heat. Carefully add pepper and onion; cook until tender.
- Slowly add pasta sauce to skillet and bring to a simmer; remove from heat.
- In a large bowl, stir together pasta and sauce mixture. Serve into small bowls, top with pumpkin seeds, cheese, and parsley.
